CHICKEN WITH ROSEMARY BUTTER SAUCE CHICKEN WITH ROSEMARY BUTTER SAUCE — Sauteed chicken breasts smothered in a creamy rosemary butter sauce. Ready in 20 minutes or less! I know it’s been said before, but you really can’t have too many chicken recipes. Especially chicken recipes like this Chicken with Rosemary Butter Sauce. This delicious dish can be made in about 20 minutes and only dirties one pot! And a sauce made with butter and cream–how could you possibly go wrong there? This chicken is nice enough for company, but easy enough for a weeknight meal. My kind of dinner! I recommend a side of rice, potatoes or pasta to go with the creamy rosemary and butter pan gravy. AVOCADO AND TOMATO SALAD Fresh and bright, this Avocado and Tomato Salad is a perfect side dish alongside any Mexican themed meal. It’s also a great pot-luck salad! This recipe is actually one that I made first back in 2008, alongside these Steaks with Mexican Spices and Chile Con Queso. This Avocado and Tomato Salad is the definition of simple – which is why it’s so good. I love when you can take so few ingredients and turn it into something so delicious and packed with flavor. And even though it’s April, and super flavorful, in-season tomatoes are no where to be found, this salad still packs a punch. HOMEMADE COOKIE MONSTER ICE CREAM Creamy (no churn!) vanilla ice cream loaded with 2 different kinds of cookies. A cookie lover’s dream come true! I don’t want to sound like an old fogey, but Sesame Street these days is just ridiculous. Apparently Cookie Monster eats vegetables and says that cookies are a “sometimes” food?!?! WHAT?! Pfffttt. If you’re like me and believe cookies are one of the main food groups, then this ice cream is for you! It’s loaded with 2 different kinds of cookies and I mean loaded! No 1-2 cookie pieces per bowl on this blog uh-uh! One thing to note here is the use of store bought chocolate chip cookies. I adore store bought sweets as much as the next guy (okay probably even more, looking at you store bought cupcakes!). However, packaged chocolate chip cookies are not my favorite. Flourless Chocolate Brownie Cookies {naturally gluten free recipe} Crispy and chewy at the same time, intensely chocolatey and rich, these cookies are closer in flavor to a brownie than a traditional cookie. I was craving something sweet and chocolate this weekend, but I didn’t want to spend a whole lot of time baking. I’ve had this recipe saved to try for a while now and this was the perfect opportunity to try it out. It only took a few minutes to whisk the batter together and these cookies were in the oven in very little time at all. For the chocolate lover in your life, these cookies are the ultimate treat! Ingredients 3 cups powdered sugar 3/4 cups dutch process cocoa powder 1 teaspoon kosher salt 2 large egg whites 1 large egg 2/3 cup bittersweet or semi-sweet chocolate chips Instructions Preheat the oven to 350 degrees. Turkey Cupcakes – Thanksgiving Cupcake Decorating Christmas, Halloween and Valentine’s Day have a ton of fun dessert decorating ideas, but I think Thanksgiving gets a little gypped. After all, we spend most of the day making food, so why not make it cute?! Don’t panic, I didn’t put actual turkey in these cupcakes! They just look like adorable little turkeys 🙂 These Turkey Cupcakes are chocolatey and have some Reese’s Pieces as the feathers, so it’s the perfect decorating activity! If you’re allergic to peanut butter, just use 1 row of candy corn instead and have it fan out like feathers would! There are also lots of substitutions to making the little turkey faces, so check for those in the notes below! Pecan Pie Cheesecake Cheesecake and Pecan Pie together in one dessert. How could anything be better? This outrageously good Pecan Pie Cheesecake has a crust made from vanilla wafer crumbs, a nutty and sweet pecan pie layer topped off with a cool and creamy cheesecake layer. I’ve become obsessed with the Crock Pot Dulce de leche I made recently so I drizzled that on top. This was the first cheesecake I’ve made in eons. I’m surprised I even still had my springform pan. Note: The recipe (from Taste of the South) did not call for a water bath and I didn’t use one. I thought about it, but I didn’t have any aluminum foil to wrap around the bottom of my springform pan. When I took the cheesecake out of the oven, it looked absolutely perfect. Completely smooth on top. But when I walked past it about 10 minutes later, it had a giant crack down the middle. Easily fixed with some Dulce de Leche. But if you don’t want a crack, try using a water bath. Although I’m not sure how much they really help...

LOW CARB TACO CUPS {KETO FRIENDLY} This recipe is so easy to make. It’s especially easy if you’ve got left over taco meat. If you don’t, before beginning to make the taco cups brown a pound of 80/20 ground beef. Once meat is browned, add taco seasoning. You can use a packet of taco seasoning, or use my Keto friendly homemade taco seasoning (recipe here) for less carbs. Once the taco meat is ready, go ahead and begin making the batter for taco cups. See photos below for a quick picture tutorial. I spooned about a tablespoon of batter into each muffin cup (it made 14). Then, I sprayed my hands with cooking spray and used my fingers to pat the batter up the sides of the pan to form the taco cup. Bake for 8 minutes then remove from oven. Different baking powders can make this rise more than others. If your cups rise quite a bit, simply use the back of a spoon to push the dough back down before adding the taco meat. Spoon taco meat generously into muffin tins. Top with a tablespoon or so of...

The pasta is cooked in the chicken broth (stock) so it takes on all the delicious flavours. (For a more substantial dinner you can add shredded chicken) Usually when you cook pasta you use plenty of boiling water and keep it at a rolling boil. With this recipe to ensure the pasta packs a flavour punch, you want to use the lowest simmer possible.
